The chicken recipe I’m sharing today is full of fresh vegetables, no processed or hidden ingredients, and takes very little time to prepare. You may prefer it with some bean sprout, bamboo shoot, snap peas or with any vegetables you fancy. Serve it alongside some steamed white rice or brown rice, and or your preferred type of noodles to have a stomach filling meal.

Ingredients

  • 4 cups Water

  • 2 cups White rice

  • For the Sauce:
  • ½ cup Soy sauce

  • cups Brown sugar

  • 1 tablespoon Cornstarch

  • 1 tablespoon Minced fresh ginger

  • 1 tablespoon Minced garlic

  • ½ teaspoon Red pepper flakes

  • For the Stir-Fry:
  • 3 pieces Skinless, boneless chicken breast halves (thinly sliced)

  • 2 tablespoons Sesame oil (divided)

  • 1 head Broccoli (broken into florets)

  • 1 piece Onion (cut into large chunks)

  • 1 cup Sliced carrots

  • 1 (8-ounce) can Sliced water chestnuts (drained)

  • 1 piece Green bell pepper (cut into matchsticks)

Directions

  • Step 1:
    As that, add water and rice to a saucepan then leave it to boil at high heat. Lower the heat to medium low, cover and allow to braise for 20 – 25 minutes until the rice is done and the water is integrated.
  • Step 2:
    In a medium bowl, stir constantly soy sauce with brown sugar and cornstarch mixture until it becomes a smooth mixture. Finally add soy sauce) ginger garlic paste and red pepper flakes to the mixture and then add the chicken to the mixture. Turn the mixture over and leave it in the dish covered and chilled for about a quarter to an hour to allow it to marinate.
  • Step 3:
    Add 1 tablespoon of sesame oil to the wok or a large pan and place the pan unto medium high heat. Sauté for 4 minutes before putting in the broccoli, onion, carrots, water chestnuts and bell pepper and cook for another 1 minute until vegetables are crisp tender. Pour them into another dish and let them stand.
  • Step 4:
    In the same wok or skillet, heat the rest of the one tablespoon sesame oil in high fire setting. Now take this chicken and remove the marinade before sauteing for roughly 2 minutes on each side until the chicken pieces have brownd. Sauté the cooked vegetables and-transfer the marinade that has been set aside. Boil and go on cooking for further 5-7 minutes and stir from time to time until chicken will be cooked and vegetables will be softened. The stir fry is best served over the cooked rice.
