  • 4 slices Sourdough bread

  • 60 grams/tbsp Salted butter

  • 2/6 cup (heaped)t Vintage cheddar cheese

  • 60 grams/cup Mozzarella (freshly grated)

Directions

  • Butter the Bread
    Slather butter on both sides of each slice of bread (yes, all 4 sides!). This will ensure a crispy, golden exterior.
  • Lightly Toast
    Heat a heavy-based skillet or frying pan over medium-low heat (no oil or butter in the pan). Place the bread in the skillet and toast lightly for about 1 minute. This step creates a light crust, which helps the cheese melt more evenly when we flip it.
  • Pile on the Cheese
    Flip one slice of bread over, then pile on the cheddar cheese followed by mozzarella. Place the second slice of bread on top, with the hot toasted side facing the cheese.
  • Cook the First Side
    Cook for about 3 minutes, or until the bread is golden and crisp. Press down lightly with a spatula every now and then. If it’s browning too quickly, remove it from the heat to cool down a bit, then lower the heat.
  • Flip and Cook the Other Side
    Flip the sandwich carefully and cook the other side for another 3 minutes, or until golden and the cheese has fully melted.

  • 1. When it comes to butter and cheese, your needs will more or less vary in proportion with the size and shape of your bread. My principle as to course design is ‘more is more rather than ‘less is more.’

Bread – this recipe will work fine with any bread though you want to ensure it’s not too thick (cheese might not melt), too thin or too soft (will get squished by the cheese), too holey (cheese-escape-routes). My favorite is a good sour dough but I don’t love those over the top sour dough with a thick, chewy and hard crust that you could break with your teeth. All you need is any standard, good sourdough!
    3. Cheese options – You should use mozzarella (for its cheese pull and non-greasy melting functionality) with flavoured cheese only – because mozzarella has low flavour intensity. My most preferred fillings would have to be a good vintage cheddar, or even Gruyere if it is available.
    Otherwise, I’ll use anything and everything, tasty, Monterey Jack, colby, swiss, cheddar etc. They came out cheesy and greasy I just wanted my grilled cheese!!!!!
